Seafood Salad

Description

Capture the fresh flavors of the sea with this tangy, chilled salad. It’s delicious for lunch or dinner and is an excellent source of antioxidants.

Ingredients

  • 1 14.5 oz. Contadina® Diced Tomatoes
  • 4 Tbsp. olive oil
  • 1/2 cup onions diced
  • 2 garlic cloves minced
  • 8 oz. shrimp medium sized, peeled and deveined
  • 8 oz. scallops medium sized
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup italian bread cubed
  • 1 cup sweet peppers yellow, cut into strips
  • 2 cups lettuce torn
  • 2 Tbsp. fresh parsley chopped
  • 1 Tbsp. vinegar white wine

Directions

1. HEAT 1 tablespoon oil in medium skillet over medium-high heat. Add onion and garlic; cook 1 to 2 minutes or until tender.

2. ADD shrimp, scallops, salt and pepper; cook 3 minutes or until shrimp are pink. Remove from skillet.

3. HEAT 1 tablespoon oil in same skillet over high heat. Add bread cubes; cook 1 to 2 minutes or until bread is golden.

4. TOSS seafood, tomatoes, sweet pepper, lettuce, parsley, remaining oil and vinegar in large bowl. Top with croutons.
