Mozzarella and Vegetable Marinara

  • 16 oz. Contadina® Tomato Sauce
  • 1-3/4 cups Contadina® Bread Crumbs with Roasted Garlic and Savory Spices
  • 1 Tbsp. olive oil
  • 1/2 cup chopped onion
  • 1 garlic clove minced
  • 1 Tbsp. fresh basil chopped
  • 1/8 tsp. red pepper; red pepper flakes crushed
  • 1 lb. mozzarella cheese in strips
  • 1 zucchini medium sized, cut into strips
  • 1 sweet peppers red or green, cut into strips
  • 3 eggs beaten
  • vegetable oil


1. HEAT olive oil in small saucepan over medium-high heat; saute onion and garlic 1 minute. Stir in tomato sauce, basil and red pepper flakes. Bring to boil. Reduce heat; cook gently for 10 minutes. Keep warm.

2. DIP cheese, zucchini and sweet pepper into eggs, then into bread crumbs. Repeat to coat again. Heat 1-inch deep vegetable oil in medium skillet over high heat. Cook quickly in oil; remove with slotted spoon. Drain on paper towels. Serve with warm marinara sauce.
