Milan Chickpea Soup

Ingredients

  • 6 oz. Contadina® Tomato Paste
  • 4 cups chicken broth or water
  • 31 oz. garbanzo beans undrained
  • 1 cup mushrooms sliced
  • 1 cup chopped onion
  • 1-1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. marjoram
  • 1/2 lb. italian sausage casings removed or ground beef
  • 2 Tbsp. parmesan cheese grated

Directions

1. COMBINE water, chick peas, mushrooms, onion, tomato paste, salt, pepper and marjoram in large saucepan. Slice sausage into big pieces; add to soup.

2. COVER; bring to boil. Reduce heat; simmer 30 minutes, stirring occasionally.

3. SPRINKLE with grated Parmesan cheese before serving.
