Contadina Garden Sauce

Ingredients

  • 1 14.5 oz. Contadina® Diced Tomatoes with Italian Herbs
  • 1/3 cup Contadina® Tomato Paste with Roasted Garlic
  • 1 tsp. olive oil
  • 1 cup red onion sliced
  • 1 cup bell pepper yellow and green, thinly sliced
  • 2 cups mushrooms sliced
  • 1/2 tsp. salt
  • 3 Tbsp. fresh basil chopped, or 2 tsp. dried basil, crushed
  • 1/2 cup chicken broth

Directions

1. HEAT oil in large skillet over medium-high heat. Add onion, garlic, bell pepper, mushrooms, salt and basil. Cook 3 to 4 minutes or until vegetables are tender.

2. STIR in undrained tomatoes, tomato paste and broth. Bring to boil. Reduce heat to low; cook, uncovered, 10 to 12 minutes. Toss with hot cooked pasta or rice, or serve over grilled chicken, shrimp or fish, if desired.
