Mangia! This hearty chicken recipe is full of fresh Italian flavors. Serve with your favorite Del Monte vegetable side for a balanced meal any night of the week.


  • 6 oz. Contadina® Tomato Paste
  • 6 boneless, skinless chicken breasts
  • 1/4 cup flour
  • 3 Tbsp. olive oil divided
  • 2 cups onion sliced
  • 14 oz. chicken broth
  • 3 carrots peeled and sliced
  • 2 tsp. garlic salt
  • 1 tsp. italian seasoning
  • 1/8 tsp. red pepper; red pepper flakes optional
  • 2 zucchinis sliced


1. COAT chicken with flour in shallow bowl. In large skillet, heat 2 tablespoons oil over medium-high heat. Add chicken; cook 2 to 3 minutes on each side or until golden brown. Remove chicken from skillet.

2. ADD remaining oil to skillet; heat. Add onion; sauté until tender. Stir in tomato paste, broth, carrots, garlic salt, Italian seasoning and red pepper flakes.

3. RETURN chicken to skillet; spoon sauce over chicken. Bring to boil. Reduce heat to low; cover.

4. SIMMER 25 minutes or until chicken is no longer pink in center. Add zucchini; simmer 5 minutes. Serve over hot cooked pasta, if desired.
