Chicken in Cilantro Sauce

  • 15 oz. Contadina® Tomato Sauce
  • 1 Tbsp. olive oil
  • 3 sweet peppers small green, red, and yellow sweet pepper, sliced into 1/4-inch rings
  • 6 boneless, skinless chicken breasts
  • 1/2 cup fresh cilantro chopped
  • 1/2 cup chopped onion
  • 1 garlic clove crushed
  • 1/8 tsp. salt


1. HEAT oil in medium skillet. Add sweet peppers; sauté until crisp-tender. Remove peppers from skillet, reserving any liquid.

2. ADD chicken to skillet; cook until browned on both sides. Remove skillet from heat; cover to keep chicken warm.

3. PLACE tomato sauce, cilantro, onion, garlic and salt in skillet. Blend until smooth. Pour over chicken in skillet.

4. RETURN skillet to heat. Bring to boil. Reduce heat to low; simmer, uncovered, 10 minutes or until chicken is no longer pink in center. Remove chicken to serving platter; top with peppers. Serve with sauce.
