Bacon, Shrimp, and Bean Soup

Ingredients

  • 1 can (28 oz.) Contadina® Crushed Tomatoes with Italian Herbs
  • 1 can (14.5 oz.) Contadina® Diced Tomatoes
  • 4 bacon slices, diced
  • 1 cup chopped onion
  • 3 cans (14.5 oz. each) chicken broth
  • 1/2 cup olives sliced
  • 1/4 tsp. black pepper
  • 1 can (15 oz.) garbanzo beans drained
  • 1/2 lb. shrimp peeled and deveined (optional)

Directions

1. Cook bacon in a large saucepan over medium-high heat, 3 minutes or until crisp; drain.

2. Add onion; cook 3 minutes or until soft.

3. Add chicken broth, crushed tomatoes, olives, pepper, beans, and diced tomatoes.

4. Bring to a boil. Reduce heat; simmer, uncovered, 10 minutes.

5. Add shrimp; cook 3 minutes or until shrimp turn pink. Sprinkle with Parmesan cheese, if desired.
